Ingredients
3 tbsp red lentils
100ml low-salt veg stock
¼ tsp cumin + coriander
2 tbsp cooked white rice
3 broccoli florets
Preparation
1Sauté onion in olive oil 3 min until soft.
2Add garlic & spices, cook 1 min.
3Add lentils + stock, simmer 18–20 min.
4Steam broccoli 7–8 min until tender.
5Serve with rice. Mash lightly if needed.

Method
1Boil pasta in well-salted water until al dente. Reserve 1 cup of pasta water.
2Fry guanciale in a dry pan until golden and crisp. Remove from heat.
3Whisk eggs and Pecorino vigorously until smooth and pale.
4Drain pasta and add to the guanciale pan off the heat. Toss to coat.
5Pour egg mixture over, tossing quickly. Add pasta water a splash at a time until silky.
